La picantería Arequipeña: cambios y continuidad culinaria

RESUMEN
Este artículo presenta los principales cambios externos e internos que
están presentando las picanterías arequipeñas2. Además, el ascenso social
que están experimentando, los grupos sociales que las frecuentan
y las variedades culinarias y gastronómicas que ofrecen, como también
los horarios, dinámica y vitalidad cultural a través de la reproducción
de costumbres. Finalmente se reflexiona acerca del futuro de las picanterías
arequipeñas, el nuevo rumbo que tomarán los comensales y picanteros
de antaño, la fuerza de la tradición y la necesidad de preservar el sabor
frente a los precios y las tarjetas de crédito.

ABSTRACT
This article presents the external and internal main changes that are
presenting the picanterías arequipeñas. Also, the social ascent that is
experiencing, the social groups that frequent them and the culinary and
gastronomic varieties that offer, as well as the schedules, dynamics and
cultural vitality through the reproduction of customs. Finally it is meditated
about the future of the picanterías arequipeñas, the new direction that you/
they will take the diners and picanteros of in the past, the force of the
tradition and the necessity to preserve the flavor in front of the prices and
the credit cards.
